Broiled Finnan Haddie

2 pounds Finnan Haddie [cold-smoked Haddock]

Hot Water

2 tablespoons Butter

Pepper

Cover Finnan Haddie with hot water and let stand 10 minutes. Drain. Place on greased broiler rack. Spread with butter, sprinkle lightly with pepper and broil in preheated broiler under moderate heat until brown, turning once.

Serve 4.
