Deviled Salmon in Potato Nests (1940)
Devlied Salmon in Potato Nests

2 tablespoons Minced Onion

2 tablespoons Minced Pepper [Green Sweet Pepper]

3 tablespoons Fat

1 cup Condensed Tomato Soup

1 teaspoon Prepared Mustard

1/2 teaspoon Salt

1 teaspoon Lemon Juice

1 (1-pound) can Salmon, flaked

3 cups Mashed Potatoes

1/2 cup Bread Crumbs

3 tablespoons Melted Butter

Brown onion and green pepper in fat. Add soup and seasonings. Simmer for a few minutes; add salmon. Shape potatoes into 6 nests on buttered baking sheet and fill with salmon mixture. Top with crumbs mixed with melted butter. Bake in hot oven (400 degrees F.) until crumbs are browned, about 15 minutes.

Serves 6.
