6 Salt Herring
2 tablespoons Bread Crumbs
2 tablespoons Butter
1 tablespoon chopped Parsley
1-1/2 tablespoons Lemon Juice
Soak herring in cold water overnight, drain and clean. Remove skin and separate each fish into 2 fillets, removing bones. Mix remaining ingredients to a smooth paste. Spread each fillet with paste, roll, fasten with string or toothpicks. Place in baking dish, cover with oiled paper and bake in moderate oven (375 degrees F.) 10 to 15 minutes. Remove string or toothpicks, serve hot.
