Maine Baked Finnan Haddie
1 teaspoon chopped Onion
1 tablespoon chopped Green Pepper
3 tablespoons Butter
3 tablespoons Flour
1/4 teaspoon Paprika
2 cups Milk
2 cups cooked Finnan Haddie [boiled Cold-Smoked Cod]
1 cup Buttered Bread Crumbs
Cook onion and green pepper in butter until tender. Mix in flour and paprika and add milk gradually. Heat to boiling and pour over fish in greased baking dish. Cover with crumbs and bake in moderate oven (350 degrees F) 20 minutes or until crumbs are browned.
