Mackerel Grill

1, 4-pound Mackerel

Salt and Pepper

1 tablespoon Butter

1 Mackerel Roe

8 strips Bacon

2 Tomatoes, cut into halves

Place cleaned split mackerel on greased broiler, skin side up. Season, place 4-inches under moderate broiler heat and broil 5 or 6 minutes. Turn fish, brush with butter, add roe and bacon and continue cooking 5 minutes more; add tomatoes, torn roe and bacon, cook 5 minutes longer or until browned.

Serves 4.
